This one's apparently been out there for a while, but I came across it in a Tom Wait's interview of himself.
Anyway, the point in "Cheap, Fast, or Good... pick 2" is:
If it's Cheap and Fast, it's not going to be Good.
If it's Cheap and Good, it's not going to be Fast.
If it's Fast and Good, it's not going to be Cheap.
Right now, I consider myself Cheap and Good. I'll strive for Fast and Good.

I've heard it among engineers as, "cheap, fast, accurate. Choose two."
I think my dad's was "Price, quality, service. Choose any two."
